Anyone who knows me knows I love cake in all forms. From Victoria sponge and brownies to cheesecake and Danish pastries, I certainly have a sweet tooth, so choosing our wedding cake was sure to be fun!

I already knew of Jen from Edible Essence Luxury Fine Cakes because our paths crossed regularly for Wedding Ideas’ beautiful cake features, but when we visited a wedding fair in Exeter and saw her beautiful stand filled with mouth-watering cakes (and after tucking into a delicious salted caramel cake sample) we knew she was the one to create our very own wedding cake.

Of course, there’s the added consideration that your cake needs to be beautiful inside and out. The flavours you choose will mean just as much to you as the decoration. One size doesn’t fit all…

Check what size of cake you will need. If you have only 30 guests, it would be silly to order a huge four-tier wedding cake. If you want the extra height, ask your cake maker if they could include polystyrene layers at the bottom, to save you a little money and so that you aren’t left with cake for breakfast, lunch and dinner for months after the wedding day!

Equally you will want every guest to be able to join you in having a slice of cake, so check what size will cater to your numbers. You can always have smaller, taller rounds for each tier if you want to achieve a tall cake but have fewer portions. And if you want a single tier cake but have a huge guest list, why not display an array of single tier cakes on a decadent dessert table? Where there is cake, there’s a way!

When should you finalise your order?

You want to be sure that your cake maker has all of the details and dates correct to ensure your cake arrives where and when it should. Make sure your chosen cake maker is free on your date by letting them know right from the offset.

Do you want every part of your cake to be edible? This might help you choose how it is decorated. Fresh flowers will be ruled out unless they are edible, so fondant decorations come into their own here.

Can they cater for allergies?

If you or any of your guests have any allergies, this is something you definitely need to check. Perhaps you could have a few cupcakes alongside your tiered cake to offer to guests with intolerances? Edible Essence have a separate kitchen where gluten free cakes are created especially for Coeliacs. 

 

How long will your cake last?

If you are having a traditional fruitcake, then if stored correctly your cake could last for up to a year! A sponge cake, on the other hand, would struggle to see out more than a week or two. And if it’s filled with buttercream, you’re only really looking at a few days. Any which way, check with your cake maker so that you can share any leftovers out appropriately.
