I’m Katie Fredericksen, I own the company Eat. Press. Catering. and I’m the owner, chef, and coordinator. I got started in catering after college. I majored in nutrition and I went and worked for a couple catering companies and restaurants, and I enjoyed the expressions on people’s faces when I served them.

So, I would recommend, in the bridal suite an option for the bride and her party, charcuterie because it’s easy. It’s bite sized and it’s not too messy. I chose charcuterie because it’s a plethora of meats, cheeses, fruits, veggies. It just gives the bridal suite options to nibble on throughout the day. And I also added some sandwiches, some little bite sized sandwiches, that you know when the bride gets hungry, when the girls get hungry, they can keep themselves content so we don’t have too much champagne!

Charcuterie could be good for at the wedding during the cocktail hour. It’s a good nibble food and easy to put on a small plate. Also for bridal showers, baby showers, and a lot of women like the small bites. It makes it easy so you don’t have to put a big plate of food in front of you.

When a client books me for their event I’m there from day one. I like to meet in person. We sit down, have a conversation. I listen to your ideas, I kind of give my ideas and we create a menu. I will be there at the event, the whole time, and I will be there at the end making sure everything is completed and exceeds your expectations. I have a big heart for it so I want to know where you are so I can make this event perfect for you.

So, one interesting fact about Eat. Press. Catering. is the displays you will see underneath the food, I build those. It could be anywhere from towers encompassing ice with shrimp cocktail on top, or a piece of wood with all different artisan cheeses, meats, fruit to kind of bring out the color and display. I personally make those.

I accommodate anywhere from parties of 10 to 20, to weddings of 300. So, a client should pay their deposit about a month out just so we can finish up the conversation of the details of the food and we can get it all cleared up before the event.

So, I chose catering because I love to make people happy and I studied nutrition because I want to know what’s going in our food. At the end of the day, when you serve someone good food they’re just filled up, they’re happy, so that made me happy. That’s how I ventured on with catering.
